The Challenge

Tasting isn't an exam. It's a game of discovery.

Five axes. A scale of one to five. No wrong answers — only your reading versus the producer's. Here is the generic mechanic behind every Binario lot.

The five axes
Acidity
The bright, lively edge — from soft and round to crisp and citric.
Body
Weight and texture on the palate, from tea-like to syrupy.
Sweetness
Perceived sugar and ripeness, the backbone of balance.
Aroma
What the cup tells your nose before the first sip.
Finish
How long the flavor lingers, and how cleanly it leaves.

From five axes to the flavor wheel.

The five axes are your coordinates; the flavor wheel is the map. Once you can place a cup on the radar, the wheel helps you name what you found — stone fruit, cocoa, jasmine, cane sugar — moving from how much to exactly what. Start broad, then spiral inward.
